How to make Baked Yamarita

My family love Nigerian Egg yam so much but we got tired of that normal fry egg Recipe , is like being  in the same old rat race. So today I made this new Recipe Baked Yamarita and everyone love it

  • 500 gm Yam
  • 3 Eggs
  • 2 TBS of flour
  • Black pepper
  • Salt
  • 1ts Curry seasoning
  • Red bell pepper (Tatashe)
  • oil for fry
  • 1 big Onion
  • 1 big carote
  • 3 tbs milk
  • Smocked Becon
  • 4TBS Salsa barbecue
  • Cheese (optional)
  • 100gm green beans

Method – Baked Yamarita 

  • Wash and Cut the green beans, pepper, onions and grate the carote
  • Cut the yam, wash and fry in deep oil,  
  •  then boil the green beans for 2 minutes
  • Heat up a little oil 2tbs and fry the Onion and pepper, cover for 2 minutes
  • add Tomatoes puree, then add Salsa barbucue, cover and heat in a low heat for 15 minutes.
  • then off the heat and add grated carote-
  • Mix the flour and milk, and add it in your egg bowel,
  • Beat the eggs, add salt and seasoning to your teste and set aside.
  • Prepare your baking pan by Spraying baking pan with cooking spray
Spread a thin coating of the egg sauce on the bottom of the baking pan.
Cover with a row of fried yam following the length of the pan and slightly overlapping them (like roof shingles).
Spread some of the green beans on top of the yam,   spray the pepper mixture , Spray with Becon,  sprinkle with Parmesan cheese.

Now Repeat with another layer of sauce, Egg mixture then layer the yam in the opposite direction trimming them to fit into the pan.

Top the final layer with the yamlless  running the length of the pan. Top with some more sauce and another sprinkle of Parmesan cheese.

Bake for about 13 minutes or until hot and bubbling. Remove from oven. AND ALOW IT TO COOL FOR 2 MINUTES BEFORE slicing and serving.

Cook's Tips

If PEPPER sauce seems too thick and strong, add a little WATER and allow it to cook more longer
